Potassium

Potassium in your diet plays an important role in the health of your body. Known by the chemical symbol, K, this mineral is involved in controlling your blood pressure, as well as aiding in muscle development and the function of the nerves. It works with the sodium in the body to maintain the correct levels of water in the body.

About 75% of the positive ions in the cells of the body are made up of potassium. It is important to have sufficient levels of this mineral in your body to enable your kidneys to function as they should. It also helps the body convert glucose into energy and provides support for the lungs in its work of expelling carbon dioxide.

The two main sources of potassium in foods are bananas and cooked lima beans. Other sources in smaller amounts can be found in:

  • potatoes
  • avocado
  • tomatoes
  • oranges
  • frozen peas
  • cauliflower
  • dried apricots
  • raisins
  • canned tuna
  • pork
  • chicken
  • salmon
  • cod
  • whole milk
  • molasses
  • wheat germ
  • prunes
  • nuts
  • cocoa, and
  • instant coffee

It is important to maintain the proper balance of both sodium and potassium in the body. Eating foods that increase the level of sodium will actually deplete the level of potassium, which can lead to a deficiency in this mineral. A deficiency of this mineral is called hyperkalemia.
